Ingredients

  • 4 Eggs
  • Salt (optional)
  • Extra virgin olive oil
  • Onion or strawberry herbs to taste

The measurements of this recipe are estimated for 2 people.

To make these cloud eggs we only need to have the fresh eggs and start by separating the yolks from the whites.

Crack the egg whites together. So you can get a structure in the form of a nest on an oven plate.

Then, add a pinch of salt to the whites if we wish and with the help of a spoon we can form mounds with a space in the middle, on a baking tray previously oiled with extra virgin olive oil.

In the space made with the spoon, we put a yolk in each mound (it will be one per egg) and we take it to a strong oven (240°C) for about 15 minutes, although it can be less if you preheat the oven.

When removing from the oven, add pepper, fresh herbs, chopped spring onion, or whatever you like.

To accompany the cloud eggs

The egg clouds are a preparation full of quality proteins, satiating but light.

It is advisable to accompany them with a fresh vegetable salad for a light dinner, although we can opt for guacamole or grilled meat if we are on a keto diet.
